This is like asking a famous chef: Is there a major reason why there
is no eggplant in your Casserole à la Maison? I know you have it
available in the kitchen, since your Ratatouille Provençal does
include eggplant, so your reason must be philosophical.
And the chef might answer: I like my Casserole à la Maison the way
it is. If you want eggplant, please order the Ratatouille Provençal.
