FWIW, this is my modified macosx make target, which builds a universal binary (there are still a lot of PPCs around...)
Not tested on 10.5 yet, but looks very similar.

macosx:
$(MAKE) all MYCFLAGS="-DLUA_USE_POSIX -DLUA_USE_DLOPEN -mmacosx-version-min=10.4 -isysroot /Developer/SDKs/MacOSX10.4u.sdk -arch ppc -arch i386" "MYLDFLAGS=-Wl,-syslibroot,/Developer/SDKs/MacOSX10.4u.sdk -arch ppc -arch i386"

I modified the makefile to see if the following would work to no avail:
gcc -O2 -Wall -DLUA_USE_MACOSX -mmacosx-version-min=10.4 -isysroot
/Developer/SDKs/MacOSX10.4u.sdk   -c -o lapi.o lapi.c

any ideas?
