I hate html mail as much as the next guy... but his mailer is correctly
sending both text/plain and text/html within a multipart/alternative. A
mailer that allows you to choose which alternative you prefer will show
you text (I have mutt configured to prefer plain text). Mail.app
probably assumes that if there is a fancy html version of the mail, you
would prefer to see that, and respond to it, but maybe you can change
its opinion!
