As others have pointed out, use getglobal.
But check out gsub in the manual. Here is a variant of the examples given there:

 Lang = "Lua"
 Version = "4.0"
 print(gsub("This is $Lang version $Version","%$(%w+)",getglobal),"\n")

templates.
